Blue-veined cheeses are available in several varieties, ranging from mild to strong with common attributes and a variety of notes including creamy, earthy, fruity, ketone, moldy, mushroom, musty and pungent. Familiar types include Brie, Camembert, Chevre, Danish, Gorgonzola, Roquefort and Stilton
