Cheese Profiles

Blue-veined cheeses are available in several varieties, ranging from mild to strong with common attributes and a variety of notes including creamy, earthy, fruity, ketone, moldy, mushroom, musty and pungent. Familiar types include Brie, Camembert, Chevre, Danish, Gorgonzola, Roquefort and Stilton.

The largest and most popular Edlong Dairy Flavors cheese category, Cheddar/Processed profiles can vary widely. Attributes can be aged, brothy, buttery, butyric, creamy, fatty, lipolytic, meaty, proteolytic, salty, sharp, sour and yeasty. Some may have fruity, peanut or smoky notes that add to their complexity.

Based on the regional specialty cheeses of Mexico, common attributes can include animal, barny, cowy or goaty notes. Edlong Dairy Flavors Queso varieties include Adobera, Aňejo, Cotija, Crema, Madurado, Manchego, Nacho, Oaxaca, Panela and Pepper Jack.

Popular for many different applications, Italian cheeses can vary in both strength and profile, mild to aged, creamy to sweaty. The Edlong Dairy Flavors menu includes Asiago, Mozzarella, Parmesan, Provolone and Romano.

Feta and Goat Cheese flavors feature the creamy, yet sour acidic animal notes you would expect from these regional favorites. Count on Edlong Dairy Flavors to deliver the precise profile and intensity that you need.
