European Cheese Flavor Collection Profiles

Nicknamed the “Queen of Cheeses,” this soft cow’s milk cheese comes from a historic region in northern France. Pale in color, it has a grayish tinge under a white rind. Profiles include musty, mushroom, animal, earthy, rindy, buttery and creamy.

Often compared to brie, this soft, creamy cow’s milk cheese has less milk fat, a deeper yellowish inside color and an intense, savory, umami flavor that can be characterized as creamy, buttery, animal, musty, earthy and mushroom.

A semi-hard mountain cheese from eastern France, ripened in caves for 4-24 months. Known for its brown-butter and roasted nut aromas, and sweet finish. Edlong offers a range of profiles including creamy, lipolytic, savory, salty, fruity and aged.

A pale yellow Dutch cheese. Baby Edam is soft with a mild, slightly nutty taste, which can also be described as fruity, savory, lipolytic, creamy, yeasty and mild.  Aged Edam has a drier, saltier more complex flavor and is perfect for grating.

Pronounced “how-da” in its Dutch city of origin. Has rich, savory, yeasty, nutty, creamy, earthy, salty, brothy and animal notes. Excellent grated, sliced, cubed or melted, served as a table or dessert cheese.
