I am a Junior Flavorist in the Elk Grove Village R&D Flavor Lab. I started working at Edlong in June, 2011.
How would you describe your typical day?
I start each day preparing a set of flavor compounds for our internal chem review sensory panel. I like to group these compounds by categories: ketones, fatty acids, lactones, essential oils, esters, aldehydes and many others. This helps me learn, and review flavor compounds to continuously refresh my flavor arsenal for flavor development. After our chem review sessions, the rest of my day includes creating new flavors to expand our product line, and formulating flavors for customer-oriented projects to generate business growth for our company.
What’s your favorite part about working here?
My favorite part of working at Edlong is flavor development. As a Junior Flavorist, I am learning different techniques from my mentors and other scientists at Edlong to create dairy flavors. Flavor development allows me to be creative, innovative, and strategic to construct a flavor that our customers will enjoy tasting in their applications.
Is there a project, event, etc. that sticks out in your mind or a favorite memory that you might have from your time here?
I remember working on a project with a customer where flavor samples were sent back and forth for a few weeks. The flavor profile was not a match and our team continued to adjust the flavor formula, as well as the application. We invited the customer to our lab to spend a few days working on the project. We were able to share different flavor compounds with the customer to get a better understanding of each other’s profiling language when evaluating flavors.
After only a few flavor adjustments, we were able to match the customers target profile. We submitted the flavor for preliminary trials in the customer’s production facility, and their customer approved the final product.
This specific project sticks out in my mind because we were able to understand the customers’ needs better by sharing the same language when evaluating flavors. We were able to learn from our customer to help them achieve the profile they desired. It reminded me of chem review sessions, where everyone learns something new.
How does what you do impact Edlong’s customers?
Our company sells many flavors to our customers. My job is new flavor development. I create flavors for the customer to help their applications taste great.
How does your work make Edlong better?
I enjoy creating new flavors and I feel my flavors are unique. I develop flavors for our customers and our product line to help our company grow. However, I have to thank our sales and marketing team for their inspiration of our product development. They provide us with projects and guidance for new flavor development. It is important to communicate and understand these departments and many other departments at Edlong to launch a new flavor at Edlong. Our company works well together to help me create new flavors to make Edlong better.
