There’s a new ancient grain in the bread basket—teff. Teff originates from Ethiopia and is one of the first domesticated crops in the world circa 5000 B.C. Not content with being the oldest super grain, teff is also one of the most nutritious. It’s gluten-free, has 50% more protein, 5 times the fiber and 25% more calcium than brown rice. And it’s one of a few ancient grains with high levels of Vitamin C. Teff can be ground into flour for baked goods, pancakes or pizza crust and also works well in savory applications.

One Sweet Bar from One Healthy Grain

Teff is a natural for baked goods and its nutty, molasses-like profile inspired us to pair it with banana and caramel, creating a healthy riff on Bananas Foster in a baked bar form. Taking it one sweet step further, we topped it with a cream cheese glaze, creating an indulgent, gluten-free, healthy whole grain bar.

For both the bar and cream cheese glaze, we incorporated several Edlong flavors allowing for a reduction in the use of dairy commodities and a cost effective use of flavors.
